Soukhov Bughdunousov Dabag (Onion, Parsley Omelet)
(Serves 2-4)
Ingredients:
1 cup chopped scallions, or 1 chopped medium onion
1 bunch parsley, washed, trimmed and chopped
4 eggs, beaten
Olive oil
Salt and pepper, to taste
Directions:
Beat the eggs in a bowl until smooth.
Sautee scallions in oil.
Add scallions and parsley to eggs.
Add salt and pepper to mixture.
Ladle portions onto skillet, one at a time, turning each when slightly brown.
