Madzounov Jash (Yoghourt Porridge) Serves 4
1 qt. water
1 cup long grain rice
2 tsp. salt
1 qt. madzoun
8 oz. butter
2 tbsp. dry crushed mint
Heat water in a large saucepan and bring to a boil. Lower flame; add rice and salt, and let simmer for ½ hour, or until rice is soft.
Add madzoun and stir until mixture is reheated. Add mint and stir.
Serve in soup bowls and add 1 oz of butter to each
