Kufta, siserov (Chickpea patties)
Siserov Koufta / Chickpea balls
Ingredients
½ lb. chickpea powder ½ cup flour 1 cup water ¼ tsp. mint ¼ tsp. coriander ¼ tsp. salt
Procedure
1. Combine chickpea powder and flour in a mixing bowl. 2. Add mint, coriander, and salt, and mix thoroughly. 3. Add water and knead mixture. 4. Take a handful of the mixture and form in the shape of a ball. 5. Continue with balance of the mixture in the same way. 6. Partially fill a stockpot with salted water and heat on medium flame. 7. When brought to a boil, place koufta balls in the boiling water and let simmer for 10-15 minutes. 8. Test with a thin dowel inserted into a ball to assure that it doesn’t slip off. 9. When complete, set aside to cool.
The koufta balls may be crumbled over lenten spinach soup (Ttabour).
Some of the koufta balls may be set aside for further use as follows: Slice the chilled koufta balls and deep fry in olive oil. When cool they may be seasoned with red pepper and served cold to complement other lenten dishes.
