Choulama (Kavourma/Chormis Armenian Omelet)

Serves 6


8 tbs. kavourma

6 thick slices chormis, diced

8 eggs, beaten

Apple Cider Vinegar

Olive Oil


1. Mix kavourma and chormis with eggs in a bowl.

2. Add ½ teaspoon of olive oil to frying pan over flame for each omelet you make.

3. Scoop 1/3 of a ladle full of mixture into frying pan.

4. Let sit till mixture solidifies then turn over to cook other side for half a minute or so.

5. Place in dish and pour drops of vinegar on omelets.


Yields about 12 omelets
