Badinjanov shird (Sliced eggplant fries)
Ingredients
1 eggplant, medium size, sliced ¼" thick
3 eggs, beaten
1 tsp flour
½ cup olive oil
Directions
1. Heat oil in frying pan.
2. Mix eggs and flour.
3. Soak eggplant slices in egg/flour mixture.
4. Fry eggplant slices until golden brown.
5. Serve hot or cold.
6. May be used for a sandwich or as a side dish.
